Ingredients

Scale
  • 4 large russet potatoes
  • 1 pound ground beef
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 6 slices turkey bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and scrub the potatoes, then pierce them several times with a fork.
  2. Bake the potatoes on a baking sheet for 45-60 minutes until tender.
  3. In a large skillet over medium heat, cook the ground beef until browned. Drain off excess grease.
  4. Add chopped onion and green bell pepper; cook until softened (about 2-3 minutes).
  5. Stir in BBQ sauce, garlic powder, onion powder, salt, and pepper; simmer briefly.
  6. Once baked, cut each potato in half lengthwise, scooping out some flesh while leaving about a 1/2-inch border.
  7. Fill each potato half with the cheeseburger mixture.
  8. Top with crumbled turkey bacon and shredded cheddar cheese.
  9. Return to oven for an additional 5-7 minutes until cheese is melted.
