  • 4 boneless, skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 3 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves (or 1/4 dried thyme)
  • 2 tablespoons butter
  • 1/4 cup chopped pecans (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cubed sweet potatoes with 2 tablespoons of olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
  3. In the same bowl, coat chicken breasts with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
  4. Arrange chicken on the other half of the baking sheet without overlapping.
  5. Roast for 25–30 minutes until chicken is cooked through (165°F/75°C) and sweet potatoes are tender.
  6. Optionally toast chopped pecans in a skillet and sprinkle over sweet potatoes before serving.
