- 4 boneless, skinless chicken breasts
- 1/2 cup pure maple syrup
- 3 tablespoons olive oil
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 teaspoon fresh thyme leaves (or 1/4 dried thyme)
- 2 tablespoons butter
- 1/4 cup chopped pecans (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss cubed sweet potatoes with 2 tablespoons of olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
- In the same bowl, coat chicken breasts with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
- Arrange chicken on the other half of the baking sheet without overlapping.
- Roast for 25–30 minutes until chicken is cooked through (165°F/75°C) and sweet potatoes are tender.
