  • 8 ounces yellow potatoes, diced

  • 1 jalapeño pepper, chopped
  • 1 pound ground beef
  • 2 large tomatoes, chopped
  • 3/4 cup beef stock
  • 1 tablespoon paprika
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add diced potatoes, onion, and both peppers; cook for about 5 minutes until softened.
  2. Stir in garlic and ground beef, breaking it apart with a wooden spoon as it browns for about 5 minutes.
  3. Mix in tomatoes, beef stock, paprika, oregano, cumin, salt, and pepper. Reduce heat to simmer.
  4. Allow to simmer for approximately 20 minutes until all ingredients are cooked through and potatoes are tender.
  5. Serve over rice or wrapped in tortillas with optional toppings like sliced peppers and lime juice.
