  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine table salt
  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup fruitcake fruit blend or your choice of dried fruit
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your muffin tin or line it with muffin liners.
  3. In a large mixing bowl, combine flour, baking powder, baking soda, salt, spice mix, and sugar; whisk until well combined.
  4. In another bowl, beat the egg lightly, then add buttermilk and melted butter; mix until smooth.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined.
  6. Fold in the fruitcake blend and candied mixed peel.
  7. Fill each muffin cup about three-quarters full with batter.
  8. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool in the tin for about 5 minutes before transferring to a wire rack and dusting with powdered sugar.
