- 1 cup corn (canned or frozen)
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1 lime

Instructions
- Dice the onion and bell pepper. Rinse the black beans.
- Heat olive oil in a large skillet over medium heat. Cook chicken for 5-7 minutes on each side until no longer pink. Season with salt, pepper, cumin, chili powder, and garlic powder.
- Remove chicken from skillet; add onion and bell pepper. Sauté for 3-4 minutes until softened.
