  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: Avocado, cheese, sour cream, or jalapeños

Instructions

  1. Dice the onion and bell pepper. Rinse the black beans.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken for 5-7 minutes on each side until no longer pink. Season with salt, pepper, cumin, chili powder, and garlic powder.
  3. Remove chicken from skillet; add onion and bell pepper. Sauté for 3-4 minutes until softened.
  4. Stir in rice, corn, and black beans. Return chicken to the skillet and add broth according to rice package instructions. Bring to a boil; reduce heat to low and cover to simmer until rice is tender.
  5. Finish with lime juice and cilantro before serving.
