- ½ cup white grape juice (or additional broth)
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- ½ cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- ¼ cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil and butter in a large oven-safe skillet over medium heat. Add diced onion and cook until softened. Stir in minced garlic until fragrant.
- Add orzo pasta and toast for 1-2 minutes. If using white grape juice, pour it in now and let it simmer.
- Pour in chicken broth, add lemon zest, salt, and pepper; bring to a boil then reduce heat to low. Cover and simmer for about 10-12 minutes until most liquid is absorbed.
- Uncover, stir in shrimp gently, cover again, and cook until shrimp turn pink (3-5 minutes).
- Remove from heat; stir in Parmesan cheese and heavy cream until melted.
- Finish with fresh lemon juice and chopped parsley; adjust seasoning as needed.
- Serve immediately garnished with extra Parmesan if desired.
