  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley for garnish

  1. In a large skillet, heat olive oil over medium heat. Sauté the sausage rounds for 4–5 minutes until browned. Remove and set aside.
  2. In the same skillet, add diced onion and bell pepper; sauté for 3–4 minutes. Stir in garlic and cook for another 30 seconds.
  3. Add smoked paprika and black pepper; mix well. Then incorporate uncooked rice, toasting it for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; stir to combine and return sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for about 20–22 minutes until rice is tender.
  6. Let it rest covered for an additional 5 minutes before fluffing with a fork and serving with fresh parsley.
