  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Season the chicken with salt and pepper. In a large pot, melt butter over medium-high heat. Cook the chicken until browned and cooked through, about 6–8 minutes. Remove from pot and set aside.
  2. In the same pot, melt more butter and sauté minced garlic until fragrant (about 30 seconds). Add crushed red pepper flakes.
  3. Pour in chicken broth while scraping up bits from the bottom of the pot. Stir in heavy cream and bring to a gentle simmer.
  4. Add fresh tortellini; cook for 4–6 minutes until tender.
  5. Return cooked chicken to the pot; stir in grated Parmesan until melted. Cook for an additional 2–3 minutes before serving.
