- 1/2 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
- 2 teaspoons coconut oil (or shortening)
- 1/3 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with aluminum foil, lightly greasing it.
- In a mixing bowl, whisk the eggs until combined. Add melted butter, brown sugar, white sugar, vanilla extract, and optional peppermint extract; mix well.
- In another bowl, combine flour, cocoa powder, and salt. Gradually incorporate this into the wet mixture using a silicone spatula until just combined. Fold in chocolate chips gently.
- Pour the batter into the prepared pan and spread evenly. Bake for about 25–28 minutes until a toothpick inserted comes out fudgy but not wet.
- Allow cooling while still in the foil. Melt white chocolate chips and coconut oil together in a microwave-safe bowl at half power until smooth; pour over cooled brownies.
