Ingredients

  • 4 oz. semi-sweet chocolate chips
  • 1/2 c. butter (softened)
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 1 c. gluten-free all-purpose flour
  • 8 oz. cream cheese (softened)
  • 2 TBSP. butter (softened)
  • 1 TBSP. cornstarch
  • 14 oz. can sweetened condensed milk
  • 2 tsp. peppermint extract
  • 1 egg
  • green food coloring (optional)
  • 1 c. semi-sweet chocolate chips
  • 1/2 c. heavy whipping cream
  • 1 TBSP. corn syrup
  • crushed candy canes and sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. For the bottom layer, melt chocolate chips and butter together. Mix with sugar, eggs, vanilla, and flour until smooth. Spread in a greased 9 x 13" pan and bake for 12 minutes.
  3. For the middle layer, mix cream cheese, butter, cornstarch, sweetened condensed milk, peppermint extract, and an egg until fluffy. Pour over baked bottom layer and bake for another 30 minutes.
  4. For the ganache topping, melt chocolate chips with heavy cream and corn syrup until smooth. Spread over cooled cheesecake layer.
  5. Chill in the refrigerator until set before cutting into bars.
