- 4 oz. semi-sweet chocolate chips
- 1/2 c. butter (softened)
- 2 c. sugar
- 3 eggs
- 2 tsp. vanilla extract
- 1 c. gluten-free all-purpose flour
- 8 oz. cream cheese (softened)
- 2 TBSP. butter (softened)
- 1 TBSP. cornstarch
- 14 oz. can sweetened condensed milk
- 2 tsp. peppermint extract
- 1 egg
- green food coloring (optional)
- 1 c. semi-sweet chocolate chips
- 1/2 c. heavy whipping cream
- 1 TBSP. corn syrup
- crushed candy canes and sprinkles (optional)
Instructions
- Preheat your oven to 350°F.
- For the bottom layer, melt chocolate chips and butter together. Mix with sugar, eggs, vanilla, and flour until smooth. Spread in a greased 9 x 13" pan and bake for 12 minutes.
- For the middle layer, mix cream cheese, butter, cornstarch, sweetened condensed milk, peppermint extract, and an egg until fluffy. Pour over baked bottom layer and bake for another 30 minutes.
- For the ganache topping, melt chocolate chips with heavy cream and corn syrup until smooth. Spread over cooled cheesecake layer.
- Chill in the refrigerator until set before cutting into bars.
