  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with parchment paper.
  2. In a bowl, combine melted butter and brown sugar; spoon 1 tablespoon into each muffin cup.
  3. Top the brown sugar mix with chopped pineapple pieces and half a maraschino cherry.
