  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 ½ cups milk
  • ½ cup heavy cream
  • ¼ cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the butter mixture until just combined.
  4. Press the dough evenly into the prepared pan and bake for 12–15 minutes or until lightly golden around the edges. Allow to cool completely.
  5. For the pudding layer, whisk together the instant pistachio pudding mix, milk, and heavy cream in a bowl until smooth. Refrigerate for about 5–10 minutes to thicken.
  6. Once cooled, spread the thickened pudding over the cookie base and garnish with chopped pistachios.
  7. Chill in the refrigerator for at least 2 hours before cutting into squares and serving.
