  • 12 Tablespoons olive oil
  • 1 cup sun-dried tomatoes
  • 5 cloves garlic (minced)
  • 68 sage leaves
  • 1½ cups pumpkin puree
  • 2 cups low sodium chicken broth (or vegetable broth)
  • 1 teaspoon dried basil
  • ½ teaspoon ground cinnamon
  • 1 lb lean ground beef (or ground turkey, chicken, or lentils)
  • 1 medium onion (diced small)
  • 2 big carrots or 12-15 baby carrots (diced small)
  • 3 celery stalks (diced small)
  • ⅓ cup dry white grape juice
  • 1 cup crushed tomatoes (no salt added preferred)
  • 1 cup milk of choice
  • Ground black pepper (to taste)
  • 1 lb pasta

Instructions

  1. In a medium pot, heat olive oil over low to medium heat. Sauté sun-dried tomatoes, garlic, and sage until fragrant. Stir in pumpkin puree, chicken broth, basil, and cinnamon; simmer for 15 minutes.
  2. In a large pot, brown the ground meat over medium heat; drain excess liquid.
  3. Sauté onions, carrots, and celery in olive oil until soft; add ground meat back into the pot.
  4. Deglaze with white grape juice, then add crushed tomatoes.
  5. Blend the pumpkin mixture until smooth; stir it into the meat and vegetables.
  6. Add milk and season with black pepper; simmer for 30 minutes.
  7. Cook pasta according to package instructions; serve topped with Pumpkin Bolognese.
