Instructions

  2. In a blender, mix together pumpkin puree, brown sugar, egg, oil, and milk until smooth.
  3. Pour the wet mixture into the dry ingredients; stir gently until just combined (lumps are okay).
  4. Heat a griddle over medium heat and grease it with butter or nonstick spray.
  5. Pour about a quarter cup of batter onto the griddle for each pancake. Cook until bubbles form on top, then flip and cook until golden brown.
