Ingredients

Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus extra for dusting)
  • Optional: Orange food coloring (for vibrant color)
  • 2 tablespoons fresh chives (finely chopped)

Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat and let sit covered for 10 minutes.
  2. Ice bath: Transfer eggs to an ice water bath for at least 5 minutes to cool.
  3. Peel the eggs: Gently crack and peel under cool running water.
  4. Halve and scoop: Slice each egg in half lengthwise and scoop out yolks into a bowl.
  5. Make the filling: Combine yolks with mayonnaise, mustard, salt, pepper, paprika, and optional food coloring; mash until smooth.
  6. Pipe the filling: Use a piping bag fitted with a star tip to fill each egg white half.
  7. Create pumpkin ridges: Use a knife or toothpick to create ridges on the piped filling.
  8. Add stems: Insert small bundles of chives into each piped egg as stems.
  9. Dust for appeal: Lightly sprinkle extra paprika over the top and add remaining chives around as garnish.
  10. Chill before serving in the refrigerator for at least 30 minutes.
