  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup vanilla protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 teaspoons pumpkin spice seasoning
  • 3/4 cup canned pumpkin
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F and prepare a muffin tin with oil or silicone liners.
  2. In your blender, combine oats, protein powder, baking soda, baking powder, sea salt, pumpkin spice seasoning, canned pumpkin, eggs, vanilla extract, maple syrup, and melted coconut oil. Blend until smooth.
  3. Stir in dark chocolate chips.
  4. Fill the muffin cups about three-quarters full and bake for approximately 15 minutes or until golden brown.
  5. Allow to cool for 10–15 minutes before removing from the pan.
