- ¾ pound chicken breasts (cut into small pieces)
- 5 tablespoons low-sodium soy sauce (divided)
- 2 teaspoons fresh lemon juice
- ½ cup diced white onion
- 1 cup frozen mixed vegetables (peas, carrots)
- 2 large eggs
- 4 cups cooked and cooled rice
Instructions
- Gather and prepare all ingredients.
- Heat sesame oil and half of the neutral oil in a wok over medium-high heat.
- Add chicken pieces, stir-fry for 5-7 minutes until cooked through, seasoning with salt and pepper.
- Incorporate diced onion and mixed vegetables; stir-fry for an additional 3-5 minutes.
- Push everything to one side of the wok, add remaining oil if needed, crack in the eggs, and scramble until fully cooked.
- Add the cooked rice along with half of the soy sauce; mix thoroughly.
- Drizzle in lemon juice and add remaining soy sauce; stir well and adjust seasoning if necessary.
