- 8 ounces ricotta
- 1 crusty bread loaf
- 1 bunch fresh basil
- 3 tablespoons olive oil (divided)
- 4 minced garlic cloves (divided)

- Preheat your oven to 400°F.
- In a baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Bake for 20 minutes until slightly burst. Allow to cool.
- In a blender, mix ricotta, 1 minced garlic clove, 1 tablespoon olive oil, ½ cup fresh basil, salt, and pepper until smooth. Refrigerate.
- Slice the bread into 12 pieces. Brush both sides with garlic olive oil and sprinkle with salt and pepper. Bake for 10-12 minutes until golden brown.
