  • 1 pound sweet cherry tomatoes
  • 8 ounces ricotta
  • 1 crusty bread loaf
  • 1 bunch fresh basil
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Balsamic Glaze

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Bake for 20 minutes until slightly burst. Allow to cool.
  3. In a blender, mix ricotta, 1 minced garlic clove, 1 tablespoon olive oil, ½ cup fresh basil, salt, and pepper until smooth. Refrigerate.
  4. Slice the bread into 12 pieces. Brush both sides with garlic olive oil and sprinkle with salt and pepper. Bake for 10-12 minutes until golden brown.
  5. To serve, spread ricotta on toasted bread slices, top with roasted tomatoes, garnish with fresh basil, and drizzle with balsamic glaze.
