  • 1 cup whole milk ricotta cheese
  • 1/3 cup crushed pistachios
  • 3 tablespoons honey (plus extra for drizzling)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1 egg (beaten)
  • 1/2 cup Panko breadcrumbs
  • Neutral oil for frying

Instructions

  1. In a mixing bowl, combine ricotta cheese, crushed pistachios, honey, vanilla extract, and salt until well mixed.
  2. Chill the mixture in the refrigerator for 15–20 minutes to firm it up.
  3. Scoop out small portions and roll them into approximately 14 small balls.
  4. Coat each ball in flour, dip in beaten egg, then roll in Panko breadcrumbs until fully coated.
  5. Heat neutral oil in a frying pan over medium heat to reach 350°F (175°C).
  6. Fry the balls in batches for about 2–3 minutes on each side until golden brown.
  7. Remove from oil and drain on paper towels.
  8. Drizzle with additional honey before serving.
