- 1/3 cup chicken broth
- 1/3 cup pesto (homemade or jarred)
- 1/4 cup heavy cream
- 1/2 teaspoon lemon juice
Instructions
- Cook the pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
- Season the salmon with garlic powder, salt, and pepper, then coat in flour.
- In a skillet, heat olive oil and butter over medium-high heat. Sear the salmon for about 3 minutes on each side until golden brown. Remove from skillet.
- Deglaze the skillet with chicken broth and pesto, scraping up browned bits for added flavor.
- Stir in heavy cream and lemon juice; let simmer for about a minute. Flake the salmon into pieces and return it to the skillet, cooking gently for an additional 3-5 minutes until fully cooked.
