  • 8 ounces uncooked pasta
  • 1 pound fresh salmon
  • Salt & pepper (to taste)
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/3 cup chicken broth
  • 1/3 cup pesto (homemade or jarred)
  • 1/4 cup heavy cream
  • 1/2 teaspoon lemon juice

Instructions

  1. Cook the pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
  2. Season the salmon with garlic powder, salt, and pepper, then coat in flour.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear the salmon for about 3 minutes on each side until golden brown. Remove from skillet.
  4. Deglaze the skillet with chicken broth and pesto, scraping up browned bits for added flavor.
  5. Stir in heavy cream and lemon juice; let simmer for about a minute. Flake the salmon into pieces and return it to the skillet, cooking gently for an additional 3-5 minutes until fully cooked.
  6. Toss the cooked pasta with the sauce in the skillet and serve immediately.
