- 3 tbsp salted butter
- 1–2 tbsp apple cider
- 1/3 cup light brown sugar, packed
- 1 and 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves

- 1–2 tsp lemon juice (to taste)
- 2 tsp cornstarch
- 2 tsp water
- 3 cups cinnamon graham cracker crumbs
- 1/2 cup + 3 tbsp salted butter, melted
- 32 ounces cream cheese, at room temperature
- 1 and 1/2 cups granulated sugar
- 4 large eggs, at room temperature
- 2 tsp vanilla extract
- 1 and 1/2 tsp cornstarch
- 3/4 cup full-fat sour cream, at room temperature
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 1/4 cup brown sugar, packed
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup cold salted butter, cubed
- 1 cup granulated sugar
- 6 tbsp salted butter, cubed
- 1/2 cup + 1 tbsp heavy cream
- pinch of flaky sea salt
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9-inch springform pan by spraying it with nonstick spray.
- For the apple filling, cook sliced apples with butter, brown sugar, spices, and apple cider until tender. Thicken if necessary.
- Combine graham cracker crumbs and melted butter in a bowl and press into the bottom of the pan. Bake crust for about 10 minutes.
- Beat cream cheese until smooth, then add sugar and eggs one at a time. Mix in sour cream, vanilla, cornstarch, and spices until combined.
- Layer half of the cheesecake batter over the crust, followed by the apple filling, then top with remaining batter.
- Place the springform pan in a roasting pan filled with water (for water bath) and bake for 90-110 minutes until edges are set but center wobbles slightly.
- Allow cooling gradually before refrigerating overnight.
- Top with crumble topping and drizzle with salted caramel sauce before serving.
