  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 2 cups cooked white or brown rice or quinoa
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Pickled ginger
  • Nori strips (seaweed)
  • Chopped peanuts or cashews
  • Extra sriracha or soy sauce for drizzling

Instructions

  1. In a mixing bowl, combine soy sauce, olive oil, honey or maple syrup, garlic powder, smoked paprika, ground black pepper, and red pepper flakes. Add the peeled and deveined shrimp to the marinade. Mix well and let it sit for about 10 minutes.
  2. Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer; cook for about 2-3 minutes on each side until they turn pink and opaque.
  3. In another bowl, whisk together mayonnaise (or Greek yogurt), sriracha, lime juice, and soy sauce until smooth.
  4. Start with a base of cooked rice or quinoa in each serving bowl. Top with cooked shrimp, shredded carrots, sliced cucumbers, radishes, avocado slices, green onions, sesame seeds (if using), and any other desired toppings. Drizzle with spicy mayo and additional sriracha or soy sauce as desired.
