2 tbsp soy sauce
2 tbsp hoisin sauce
2 tbsp rice vinegar
1 tbsp cornstarch
2 tbsp vegetable oil (for cooking onions)
1 large onion, sliced

In a mixing bowl, whisk together soy sauce, hoisin sauce, minced garlic, grated ginger, and sesame oil. Toss in beef strips and let marinate for 10-15 minutes.
Heat 1 tbsp of vegetable oil in a skillet over medium heat. Add sliced onions and sauté until soft and golden brown. Season with salt and pepper, then set aside.
In the same skillet, heat 2 tbsp of vegetable oil on high heat. Add marinated beef strips and stir-fry for 2-3 minutes until browned.
Whisk together remaining soy sauce, hoisin sauce, rice vinegar, and cornstarch in a bowl. Pour over the beef in the skillet and simmer until thickened.
Add cooked onions back into the pan with the beef mixture. Stir well and serve hot over steamed rice or noodles.
