  • 2 boneless skinless chicken breasts
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • ½ cup chicken broth
  • 1 cup sour cream
  • Fresh parsley (optional)

Instructions

  1. Slice the chicken breasts in half lengthwise, seasoning them with garlic powder, salt, and pepper.
  2. In a skillet, heat olive oil and one tablespoon of butter over medium-high heat. Cook the chicken for about 5-6 minutes per side until golden brown and cooked through (165°F). Transfer the chicken to a plate.
  3. In the same skillet, reduce heat to medium and add the remaining butter with sliced onions. Sauté until softened and lightly browned (10-15 minutes).
  4. Add minced garlic and cook for another 30 seconds. Pour in chicken broth; scrape any browned bits from the pan.
  5. Stir in sour cream until smooth; let it warm through gently.
  6. Return the chicken to the skillet, spooning sauce over it. Adjust seasoning if necessary.
