  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup almond milk (or your favorite plant-based milk)
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the peeled and cubed sweet potatoes in a large pot filled with water. Bring to a boil and cook until tender, about 15–20 minutes. Drain well.
  3. In a mixing bowl, mash the cooked sweet potatoes with extra virgin olive oil, ground cinnamon, ground nutmeg, almond milk, vanilla extract, and cubed unsalted butter until smooth and creamy.
  4. In another bowl, combine the organic brown sugar, pure maple syrup, ground cinnamon, ground nutmeg, ground allspice, soaked raisins, vegan marshmallows, and raw pecans.
  5. Spread the mashed sweet potato mixture evenly in a baking dish and top with the topping mixture.
  6. Bake for approximately 90 minutes or until golden brown on top.
