- 4 large organic sweet potatoes, peeled and cubed
- 2–3 tablespoons extra virgin olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup almond milk (or your favorite plant-based milk)
- 2 teaspoons vanilla extract
- 4 tablespoons unsalted butter, cubed into small pieces
- 1/3 cup organic brown sugar
- 1/4 cup pure maple syrup
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Pinch of ground allspice
- 1 cup organic raisins, soaked and drained
- 2 cups vegan marshmallows
- 1 1/2 cups raw pecans
Instructions
- Preheat your oven to 350°F (175°C).
- Place the peeled and cubed sweet potatoes in a large pot filled with water. Bring to a boil and cook until tender, about 15–20 minutes. Drain well.
- In a mixing bowl, mash the cooked sweet potatoes with extra virgin olive oil, ground cinnamon, ground nutmeg, almond milk, vanilla extract, and cubed unsalted butter until smooth and creamy.
- In another bowl, combine the organic brown sugar, pure maple syrup, ground cinnamon, ground nutmeg, ground allspice, soaked raisins, vegan marshmallows, and raw pecans.
- Spread the mashed sweet potato mixture evenly in a baking dish and top with the topping mixture.
- Bake for approximately 90 minutes or until golden brown on top.
