  • 4 boneless, skinless chicken breasts
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • ½ teaspoon garlic powder
  • 3 tablespoons olive oil or coconut oil
  • 1 medium onion, chopped
  • 14 ounces unsweetened coconut milk
  • Fresh parsley or cilantro for garnish
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, chopped
  • 1 medium jalapeño pepper, seeded and chopped
  • 3 medium tomatoes, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon salt
  • ½ teaspoon pepper, or to taste

Instructions

  1. In a mixing bowl, combine ground cumin, cayenne pepper, turmeric, ground coriander, garlic powder, salt, and pepper. Coat the chicken breasts in the spice mixture.
  2. Heat oil in a skillet over medium-high heat. Sear the chicken for 6-8 minutes on each side until browned and cooked through. Remove from skillet.
  3. In the same skillet, sauté chopped onions and jalapeño until softened; add fresh ginger and minced garlic until fragrant.
  4. Stir in chopped tomatoes and lemon juice; cook for another 5 minutes.
  5. Pour in the unsweetened coconut milk and simmer for about 5 minutes.
  6. Return the seared chicken to the skillet; cover and cook for an additional 5 minutes.
  7. Garnish with freshly chopped parsley or cilantro before serving.
