- 14 ounces unsweetened coconut milk

- 1 medium jalapeño pepper, seeded and chopped
- 3 medium tomatoes, finely chopped
- 2 tablespoons freshly squeezed lemon juice

Instructions
- In a mixing bowl, combine ground cumin, cayenne pepper, turmeric, ground coriander, garlic powder, salt, and pepper. Coat the chicken breasts in the spice mixture.
- Heat oil in a skillet over medium-high heat. Sear the chicken for 6-8 minutes on each side until browned and cooked through. Remove from skillet.
- In the same skillet, sauté chopped onions and jalapeño until softened; add fresh ginger and minced garlic until fragrant.
- Stir in chopped tomatoes and lemon juice; cook for another 5 minutes.
- Pour in the unsweetened coconut milk and simmer for about 5 minutes.
- Return the seared chicken to the skillet; cover and cook for an additional 5 minutes.
