  • 4 cups chicken broth
  • 2 cups whole milk or heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 45 jalapeños, chopped (seeds and membranes removed)
  • 1/2 cup cooked, diced chicken or suitable protein
  • Salt and pepper, to taste
  • 4 slices of bread (your choice of white, whole wheat, or sourdough)
  • 4 tablespoons butter, softened
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, melt the butter. Add diced onion and minced garlic; sauté until soft.
  2. Pour in chicken broth and milk; bring to a simmer for about 5 minutes.
  3. Gradually add cream cheese, cheddar, and Monterey Jack cheeses while stirring until melted and creamy.
  4. Stir in chopped jalapeños and cooked chicken; season with salt and pepper to taste.
