  • 4 salmon fillets (1 lb)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp chopped green onions
  • 1 tbsp chopped cilantro
  • 1 tsp sesame seeds

Instructions

  1. In a small bowl, whisk together sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil.
  2. Marinate salmon fillets in half of the marinade for 15 minutes.
  3. Preheat oven to 400°F (200°C) and roast cauliflower florets tossed in olive oil for 20-25 minutes until golden.
  4. Heat a skillet over medium-high heat; sear salmon for about 4-5 minutes per side until caramelized.
  5. Pour reserved marinade over the salmon and cook for another 1-2 minutes until glazed.
  6. Assemble bowls by placing jasmine rice at the base, topping with roasted cauliflower and glazed salmon.
  7. Garnish with chopped green onions, cilantro, and sesame seeds before serving.
