  • 3 tablespoons (38g) granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon milk (optional, if needed for consistency)
  • 2 tablespoons pumpkin seeds (pepitas)
  • A sprinkle of sugar for texture

Instructions

  1. Prepare the cream cheese filling by mixing softened cream cheese, granulated sugar, and vanilla extract until smooth. Chill in the refrigerator.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, combine pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  4. Gently mix the wet ingredients into the dry mixture until just combined.
