  • 1 medium cauliflower, cut into florets
  • 1/3 cup rice flour
  • 1 tbsp cornstarch
  • 1 tsp oil
  • 1/2 tsp garlic powder, optional
  • 1/31/4 cup water
  • 1.5 tbsp sesame oil
  • 1/4 cup light soy sauce
  • 1 tbsp rice apple vinegar
  • 12 tbsp Sriracha sauce, adjust to taste
  • 1 inch fresh ginger, finely minced
  • 45 cloves fresh garlic, finely minced
  • 23 tbsp honey or maple syrup
  • 1 tbsp cornstarch
  • 1/4 cup water
  • sesame seeds
  • spring onions, sliced
  • sliced chilies

Instructions

  1. Preheat oven to 425°F (220°C). Cut cauliflower into florets.
  2. In a mixing bowl, whisk together rice flour, cornstarch, garlic powder (if using), and water until smooth.
  3. Dip each floret into the batter and place them on a lined baking sheet.
  4. Bake for 25–30 minutes until golden brown, flipping halfway through.
  5. In a saucepan over medium heat, combine sesame oil, soy sauce, rice apple vinegar, Sriracha, ginger, and garlic; simmer for 5 minutes.
  6. Add honey or maple syrup, then thicken the sauce with cornstarch mixed with water.
  7. Drizzle the sauce over baked cauliflower and toss gently to coat. Garnish with sesame seeds and sliced chilies.
