- 2.5 – 3 lbs boneless beef chuck roast
- 2 tablespoons olive oil
- 1 large yellow onion
- 2 large carrots
- 2 celery stalks
- 4–6 cloves garlic
- 1/4 cup tomato paste
- 1 cup dry apple vinegar
- 1 can crushed San Marzano tomatoes (28 oz)
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- Dried herbs: bay leaves, oregano, thyme, rosemary
