Ingredients

  • 2 pounds chuck stew meat
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 2 quarts beef stock
  • 1 cup flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/3 to 1/2 cup milk

Instructions

  1. Chop onion, carrots, and golden potatoes; set aside.
  2. In a large pot over medium heat, brown seasoned stew meat on all sides; remove from pot.
  3. Sauté onions and garlic until translucent; add carrots and potatoes for an additional five minutes.
  4. Return meat to pot, sprinkle with flour, stir in tomato paste and herbs, then add beef stock. Bring to a boil, reduce heat, and simmer for two hours.
  5. Mix dumpling ingredients in a bowl; drop spoonfuls onto simmering stew during the last 15 minutes of cooking.
  6. Serve hot, garnished with fresh herbs if desired.
