  • 3 large romaine hearts, chopped
  • 1 pint grape tomatoes, halved
  • 1 cup shredded Swiss cheese
  • 1/2 cup finely shredded parmesan cheese
  • 1 1/2 cups croutons
  • 3/4 cup light olive oil
  • 1/3 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dijon mustard
  • 1 1/2 tsp honey
  • 3/4 tsp salt, or to taste
  • 1/2 tsp freshly ground black pepper, to taste

Instructions

  1. Prepare the Dressing: In a jar, mix olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, and pepper. Seal and shake until blended; refrigerate.
  2. Toast the Almonds: Preheat oven to 350°F (175°C). Spread almonds on a baking sheet and bake for 6-10 minutes until golden. Let cool.
