 - 3 large romaine hearts, chopped
 - 1 pint grape tomatoes, halved
 - 1 cup shredded Swiss cheese
 - 1/2 cup finely shredded parmesan cheese
 - 1 1/2 cups croutons
 - 3/4 cup light olive oil
 - 1/3 cup fresh lemon juice
 - 2 garlic cloves, minced
 - 1 tsp dijon mustard
 - 1 1/2 tsp honey
 - 3/4 tsp salt, or to taste
 - 1/2 tsp freshly ground black pepper, to taste
 
Instructions
- Prepare the Dressing: In a jar, mix olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, and pepper. Seal and shake until blended; refrigerate.
 - Toast the Almonds: Preheat oven to 350°F (175°C). Spread almonds on a baking sheet and bake for 6-10 minutes until golden. Let cool.
 - Assemble the Salad: In a large bowl, combine chopped romaine, toasted almonds, halved tomatoes, shredded Swiss cheese, and parmesan cheese. Shake the dressing again and pour over the salad; toss gently. Add croutons last.
