  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2–3 minutes).
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop about 2 tablespoons of dough for each cookie and roll into balls. Place them on the prepared baking sheet about 2 inches apart and press down with a fork in a crisscross pattern.
  7. Bake for 10–12 minutes until edges are golden but centers remain soft.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
