- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp espresso powder
- 1 cup hot water
- 4 large egg yolks
- 2 tbsp granulated sugar
- 2 tbsp cornstarch
- 2 cups heavy cream, divided
- 3.5 oz dark chocolate, finely chopped
- 4.5 oz white chocolate, finely chopped
- 5 oz milk chocolate, finely chopped
- ⅓ cup heavy cream
Instructions
- Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
- In a mixing bowl, combine sifted flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth; mix into dry ingredients.
- Dissolve espresso in hot water; add to batter and mix well. Divide batter between prepared pans and bake for about 35 minutes.
- For the mousses: whisk egg yolks with sugar and cornstarch; heat half of the cream with vanilla until steaming. Combine mixtures over chopped chocolates until smooth; fold in whipped cream.
- Assemble by layering cake with dark mousse then white mousse; chill for at least four hours.
- Prepare ganache by heating heavy cream and pouring over chopped milk chocolate until smooth; spread over chilled cake.
