  • 16 oz box of rotini pasta
  • 1/2 cup roasted red peppers (diced)
  • 1/2 yellow onion (diced)
  • 2 oz can black olives (sliced)
  • 1/2 large cucumber (peeled and diced)
  • 12 slices chopped cooked chicken
  • 10 chopped cheddar cheese sticks
  • 1 cup sliced turkey sausage sticks
  • 1/4 cup grated Parmesan cheese
  • 1/23/4 cup Italian dressing
  • Small pie pumpkin for serving

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooked pasta, diced roasted red peppers, diced onion, sliced black olives, diced cucumber, chopped chicken, chopped cheddar cheese sticks, and sliced turkey sausage sticks.
