  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla bean paste
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Grease a 9-inch springform pan and set aside.
  3. In a bowl, mix graham cracker crumbs, sugar, salt, and melted butter until combined. Press into the bottom of the prepared pan and chill.
  4. In another bowl, beat cream cheese until smooth; add sugar and flour. Mix in vanilla paste, then add eggs one at a time. Stir in sour cream and lemon juice.
  5. Prepare brown butter by melting it until golden brown with a nutty aroma; let cool slightly before adding to the batter.
  6. Pour filling into the crust and bake for 55–60 minutes until edges set but center jiggles slightly.
  7. Turn off the oven and let cool inside for an hour before refrigerating for at least four hours or overnight.
