Ingredients

  • 350 grams silken tofu
  • 34 tbsp smooth peanut butter
  • 34 tbsp agave syrup (or maple syrup)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 100 grams dark chocolate (70% cocoa)
  • 400g full-fat coconut milk

Instructions

  1. In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and salt. Blend until smooth and creamy.
  2. Spoon the mousse into ramekins or jars and refrigerate while preparing the ganache.
  3. Melt dark chocolate using a microwave or double boiler. Stir in the creamy part of coconut milk until well combined.
