  • 16 oz mixed nuts (cashews, almonds, pecans, walnuts)
  • 1 large egg white
  • 1/2 cup honey
  • 1 1/2 tsp kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper
  • 1/4 tsp cracked black pepper
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Whip the egg white in a mixing bowl until frothy.
  3. Toss mixed nuts in the whipped egg white to coat evenly.
  4. Add honey and spices to the nut mixture; stir until well combined.
  5. Spread the mixture on the prepared baking sheet and roast for 45–60 minutes, stirring every 15 minutes until lightly browned.
  6. Allow cooling for at least 10 minutes before breaking apart clusters.
