- 1 cup wild blend rice
- 1–3/4 cups gluten-free chicken broth
- 3 cups butternut squash cubes
- 9 oz shredded Brussels sprouts
- 1 large apple (chopped)
- 3 oz white cheddar cheese (cubed)
- Almonds or pepitas
- Dried cranberries
- Fig balsamic vinaigrette (made with olive oil, balsamic vinegar, garlic, and fig jam)
Instructions
- Cook wild rice in chicken broth according to package instructions until tender.
- Preheat the oven to 400°F. Roast butternut squash cubes tossed in olive oil and spices for 15-20 minutes until tender.
- On a separate baking sheet, roast Brussels sprouts in olive oil for about 8-10 minutes until golden.
- In a large mixing bowl, combine cooked rice, roasted vegetables, chopped apple, cheese, nuts or seeds, dried cranberries, and drizzle with vinaigrette. Toss gently and serve.
