  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine shredded zucchini and salt; let sit for 10 minutes to drain moisture, then squeeze out excess water.
  3. Mix drained zucchini with eggs, Parmesan cheese, and half of the mozzarella.
  4. Press mixture into a greased 9×13-inch baking dish and bake for 20 minutes until set.
  5. While crust bakes, brown ground beef and onion in a skillet; drain fat.
  6. Stir in pizza sauce, chopped vegetables, oregano, garlic powder, and black pepper; cook for another 5 minutes.
  7. Spread beef mixture over the baked crust; top with remaining mozzarella.
  8. Bake for an additional 20 minutes until cheese is melted and bubbly.
